Apparently I Am A Slacker

How the heck has 3 months flown by since the last time I wrote a blog?  I seriously was intending to take just a short break, however I obviously was caught up in doing a whole lot of nothing! 

I've gotten a new gadget I will be reviewing within the next couple of days that is very cool.  Any kind of technology that is affordable and improves the quality of life is ok with me. 

I'm keeping my fingers crossed that in the near future I will be adopting a new little dog, because my big dog, Balue, needs a pet.  What?  Don't your pets have pets?

I decided to go on some dates after my year of dating break, and I decided that I hate dating.  More and more I see why arranged marriages make sense.  Now if someone could arrange for me to be with Thor that would be greatly appreciated.

I've cooked a bunch of super yummy stuff lately, and thought as I was doing it "I should be blogging this" but lacked the heart to feel like taking photos of the process.  But trust me there's been some good stuff going into my belly.

See, obviously a whole lot of nothing going on here.  Which I'm assuming it's better that I haven't mindlessly written about nothing daily for 3 months straight, like some kind of blog writing zombie who feeds on wasting your brain cells instead of actually feasting on your brain cells. NOM NOM NOM

Quick Check In

I've totally slacked on blogging this month.  I've been so scattered in my mind since my last blog that I just haven't had opportunity to calm my thoughts and come up with a well thought out blog.  And speaking of last blog, when my mind is going in circles is when it's the hardest to not smoke.... back to square one.

Over the last couple of weeks I've been questioning a lot about what I REALLY want out of life at this point.  I have a dream job, I have the best dog ever, I feel mentally sound.  I've been loving being single but in my heart always lay love, companionship, and family.  Perhaps one day I'll give a go at it again because I really cannot see myself as one of those people who chose to forever be single, however finding someone compatible and trustworthy is the hard part.  Dating truly sucks and may be in the end what drives me to being the cat lady.  HA

I really want/need a new/used car as well as I'd rather be living in a house than an apartment.  So then comes my choice because I can only do one or the other this coming year... go for a more comfortable living situation or get a more reliable ride.  Though the decision should be cut and dry very easy, a rational mind would say reliable car is more important, but I still cannot help but wish for the comfort of not dealing with apartment living and having a yard for my awesome dog.  Getting a degree has been in the forefront as well.  I've done really well without one, however I could be doing a lot better with one I know. 

And then there are about 72 billion other things spinning around in that mind of mine.  I think that my mind has been going since it's a new year upon us.  So now I can't help but wonder what I'm going to do with myself next.  Really I need to find 7 billion dollars, buy and island, and retire there.  It could happen right?  As usual the universe will deliver me where I need to be.

I'm not one for making New Year's resolutions.  I never have made one.  But I always ponder what the next year will bring.  Whatever happens I'll be moving forward and making my life better as I always strive to do!!!

Step it up this year and do something to make your life better this coming year!

Fettuccini With Turkey Meatballs And Vegetables

Last night I cooked a fabulous pasta dinner that was beyond fantastic.  I had been searching for a pasta dish that was different, not the same typical pesto, tomato or Alfredo sauce.  I kept seeing recipes that looked good but not quite what I wanted.  Finally I decided to just use ingredients and techniques of various recipes I had found.  Time for a blonde girl spin.














Ingredients:

1 - 14 ounce Package of Armour Turkey Meatballs - Thawed
1 - Pint Grape or Cherry Tomatoes -Whole
1 - Bell Pepper (I used yellow for color contrast) - Sliced
1 - 8 ounce Package of Baby Bella Mushrooms - Sliced
1 - 9 ounce Package of Buitoni All Natural Fettuccine
1 - 9 ounce Package of Spinach - Whole Leaf (Or Baby Spinach)
1 - Package of Fresh Basil (1/2-3/4 cup) - Largely Chopped
1/2  cup Parmesan Cheese, Shaved
1 Bottle of Extra Virgin Olive Oil to keep handy.
Salt & Pepper to taste

I used Baby Bella Mushrooms, you can substitute with white mushrooms, however Bella's give you such a flavor punch that white do not.  I use the Buitoni Fetuccine because their fresh pastas, that you can find in the dairy section of the grocery store, just have such a better flavor and texture than your typical dried pasta, not to mention it cooks in less than half the time.  The fresh basil gives an incredible flavor, you do not want to skip it, you'll find it in the packaged fresh herb section of your produce section.  Unfortunately I didn't think to measure the Extra Virgin Olive Oil and eyeballed that part so I'll have to just give you guesstimates on how much I used and you'll have to figure out what works for you.  Have fun and use your favored vegetables or a different kind of meatballs in your dish, this is just what I used and it was great!  You'll be surprised at how flavorful the Turkey Meatballs are if you've never used them before, and they are not greasy at all.

Directions:
  • Preheat oven to 425 degrees F.
  • Start pot of the water on the burner to come to a boil for the pasta, use amount of water called for on the package. While waiting on the water to boil start the next step.
  • Coat the tomatoes, bell pepper, and mushrooms in about 2-3 tablespoons of the olive oil and a light sprinkle of pepper.  Spread out on a baking sheet and put in oven for 10-15 minutes until the mushrooms and bell peppers are the cooked consistency you like, I personally like a little crunch, the tomatoes will start to burst or shrivel, stir after about 6 minutes.
  • Put pasta in the boiling water, if you are using the Buitoni it should take 3 minutes exactly, set a timer, you do not want to overcook your pasta. Drain and reserve 1/2 cup of the water.
  • In a Paella pan or large skillet on medium high brown the meatballs in about 1 tablespoon of olive oil.
  • Once meatballs are nicely browned turn the heat to medium and add the entire package of spinach and 1 more tablespoon of olive oil.  It will look like a lot but it cooks way down.  Constantly stir and flip until your spinach has shrunk down.
  • By now your roasted vegetables are done, dump them into the pan with the meatballs and spinach, stir. 
  • Add pasta and 1-2 tablespoons of olive oil and toss together.  I found using a large wooden fork and a wooden spatula worked great.  Start with the smaller amount of olive oil and add more if it seems your pasta is sticking together.  Part of any stickiness will be resolved in the next step though.
  • Dump the Basil and Parmesan cheese and the pasta water on top.  Toss well until the basil and cheese are well incorporated, cheese is starting to melt, and the water has pretty much been absorbed, add more olive oil if needed.  Salt and pepper to taste.
  • Remove from heat and serve immediately.  Top with Parmesan cheese and salt and pepper if you desire.
This dish will feed about 4 people, or 2 people who somehow have room for seconds.  I did not find that I needed anything else because this meal was very flavorful and filling.  Though I'm sure sides of salad and a nice baked bread brushed in olive oil and covered in an Italian cheese blend then baked until melted would be perfect compliments at a dinner party.  Though it may sound difficult and look like something that is a result of heavy labor, it was actually really easy to make, and will surely be a welcome change if your bored with the same old pasta dish.

Be creative with cooking and experiment, you never know what kind of awesomeness you'll come up with!

Online Dating?

Online dating… kind of scary and freaky. I’ve done it. Finding strangers online didn’t work out too well for me. I actually formed my last relationship that lasted 2 years from us meeting online. I knew it was over sooner, it just took me awhile to realize what I knew had no option but to come to fruition.


One thing I've learned from my own mistakes as well as from other people is that if you put too much information out there about yourself there is no mystery.  Some people will take advantage of knowing too much about you and put up a false front because they know exactly what it is you are looking for. By the time true colors come shining through you’ve already invested time and heart strings, and then comes the dilemma of dealing with the real person for the love of the one you fell in love with or just moving on.

After my relationship that had formed online ended I decided to try again. Scary. I didn’t put out as much information about myself and what I was looking for this time. I came in contact with this guy who was super and nice and sweet, a little clingy which I find annoying but with time it becomes tolerable. A few days into talking to each other he found me on Facebook and I accepted his friend request.   Then the fun started. Within a day he starts telling me that I am now his girlfriend and he wanted me to delete all the other men on my Facebook page and did not want me talking to any other men at all. Whoa!! What!! It hasn’t even been a week since we started talking and we haven’t even met! Deleted and Blocked.

I’ve known people who have successful relationships from meeting through online dating. Typically it seems they actually talked online for quite awhile before meeting, some for weeks, some months and some years. One of my favorite online love stories was recently posted by my friend Dinosaur Mommy in her post A Borrowed Blog. At first look it is long, but it's so worth the read, even though I already knew how it would end I was on the edge of my seat the entire time hoping they would end up together.


Taking it slow and getting to know each other probably sounds less appealing for some people who are lonely. However a major advantage is people are much more open via online correspondence than they are in person. This works with friends as well. If you are a virtual chatter you probably find that you end up telling your friend who you speak to online through instant messengers, emails, and other services, even text messaging more than what you tell your friends who you spend more time with hanging out in person. This isn't the law for everyone, I just know a lot of people are like this.  And I do not see how actually getting to know someone before investing your time and heart into them can be a bad thing.

In this cyber age I am sure we will all hear more and more stories from our friends about how they met their one and only online. Do you online date? Have you had a success story or find yourself with failure after failure?
